Crunchy Chocolate Nut Granola

Ingredients

For 15 servings

  • 200 g Rolled oats
  • 25 g Chia seeds
  • 25 g Almonds
  • 25 g Cashews
  • 25 g Walnuts
  • 80 g Honey
  • 80 g Peanut butter
  • 80 g Dark chocolate

Method

  1. Heat the oven to 160 °C (320 °F) and line a baking tray with parchment paper.

  2. Roughly chop the almonds, cashews and walnuts.

  3. Warm the honey and peanut butter briefly – 30 seconds in the microwave or in a small pot – so they mix easily.

  4. Put the oats, chia seeds and nuts into a large bowl, pour over the honey and peanut butter and mix until everything is evenly coated.

  5. Spread the mixture onto the tray about 1 cm thick and press it down firmly with a spatula – that is what gives you big clusters.

  6. Bake for 20–25 minutes until golden and crunchy, turning the tray once halfway. Don't stir if you want clusters.

  7. Let it cool completely on the tray – it only turns really crunchy as it cools. Then add the chopped dark chocolate, or melt it, drizzle it over and let it set.

  8. Break into pieces and enjoy. Kept in an airtight jar, it stays crunchy for about two weeks.
